October birthdays get the best decorating season of the year, and Halloween parties get an ice cream cake that doubles as the centerpiece. At Ryan's, the fall seasonal flavors are on the board, the letter colors include orange and black, and the topping board is full of candy. Here's how to build a fall cake worth the 48 hours' notice.

Start with a fall flavor

Every Ryan's cake is built from the same small-batch ice cream in the case, and this time of year the seasonal case is the fun part. The fall lineup is Pumpkin, Pumpkin Cheesecake, Maple Walnut, Cinnamon, Caramel Apple, and Cranberry (our fall flavors preview has the full rundown). A few combinations worth asking about:

  • Pumpkin on top, Chocolate on the bottom. The Halloween color scheme built into the cake itself, with a Fudge or Chocolate Crunchies middle.
  • Caramel Apple over Vanilla. Orchard-day flavors for an October birthday, with a Rainbow Sprinkles middle for the kids.
  • Pumpkin Cheesecake over Cinnamon. The grown-up table's favorite, with a Crushed Oreo Cookie middle.
  • Maple Walnut over Coffee. For the Thanksgiving-adjacent birthday, when pie is already spoken for.

Seasonal flavors show up when the season is right and leave when it isn't, so ask the shop what's in the case when you call, and have a second choice ready. Spooky decorating, from the actual menu

The decorating options on a Ryan's cake are the same ones the crew uses every day; it's the color choices that make them Halloween. The writing comes in eight letter colors: orange, black, purple, and green cover the spooky palette, with blue, pink, yellow, and red for birthdays. Borders come as a classic shell, rosettes, rainbow sprinkles, chocolate crunchies, or whipped cream swirls, or skip the border and let the toppings do the work.

  • Dirt and worms, cake edition. Chocolate ice cream, a Crushed Oreo Cookie middle, and Gummy Bears from the topping board: the sundae in the photo above, reimagined as a cake.
  • Candy crawl. M&M's, Reese's Pieces, Nerds, and Kit Kat from the dry-topping board, scattered across the top like the bottom of a trick-or-treat bag.
  • Orange and black. Orange writing, a chocolate crunchies border, and a Fudge middle. Simple, and it photographs beautifully.
  • Sticky and sweet. Caramel or Hot Fudge from the wet-topping board, with Mini-Marshmallows on top for the ghosts.

Pick a size for the party

Six sizes cover everything from a sleepover to the whole class. Round cakes run 7-inch (serves 6 to 8), 8-inch (8 to 10), 9-inch (10 to 12), and 10-inch (12 to 15). For a Halloween party or a classroom, the half sheet serves 20 to 28 and the full sheet 30 to 45, and a sheet gives the decorator more room for writing and candy. Party cups topped with sprinkles feed a classroom without a knife. Ice cream pies handle a smaller table. And a hand-packed quart of Pumpkin next to the pie on Thanksgiving is its own tradition. Ask about any of them when you call.
